Kartoshka made from cookies

Kartoshka is a quick version of the popular Russian sweet potatoes. It is prepared with this recipe from butter cookies and without an oven. The mini cakes taste crumbly, chocolatey and fluffy.

Ingredients

for rolling

  • 20 g butter cookies
  • 10 g cocoa powder

for decorating

  • 10 g butter room warm
  • 5 g sweetened condensed milk

Instructions

  • Grind butter cookies finely.
  • Mix the ground butter cookies with cocoa powder.
  • Mix softened butter, sweetened condensed milk and rum.
  • Add the butter mixture to the cookie mixture and mix until it is homogeneous and easy to shape.
  • Shape the mixture into "potatoes".
  • Grind butter cookies finely, mix them with cocoa powder and roll the kartoshka mini cakes in it.
  • Mix softened butter and sweetened condensed milk with a fork.
  • Put the butter mixture into a piping bag and pipe "sprouts" from it onto the "potatoes".
  • Refrigerate the kartoshka mini cakes for at least 1 hour.

Notes

  • If the cookie mixture is too dry, add a little more sweetened condensed milk. If it is mushy, add more ground cookies.
  • You can adjust the amount of cocoa powder to taste, depending on how chocolaty you like your mini cakes.
  • You can omit alcohol.
